Great Holiday Weekend!

I hope everyone had a great 4th of July weekend! Dino has all the pics on his camera, so I will have to add those later! I tried out a new recipe over the weekend and I have to say it was pretty tasty! I was a little skeptical when I read the ingredients, but it is really good! I am posting it below! P.S. Please say a prayer for Dino's Mom. She has her cancer checkup this week. Please keep her in your thoughts and prayers.

Paula Deen Potato Salad

5 pounds white or red potatoes, cut in 1 in. pieces
3 Tbsp.olive oil
2 tsp. minced garlic
1 1/2 tsp. salt
1 1/2 tsp. black pepper
1/4 cup butter
1 1/2 pound onions, sliced
1 Tbsp. balsamic vinegar
Preheat Oven to 450 degrees and line roasting pan or large cookie sheet with no-stick foil.
Combine potatoes ,olive oil,garlic,1 tsp. salt,1/2tsp. pepper, and toss gently to coat potatoes. Bake 35-40 minutes. Remove and cool.
In large skillet, melt butter then add onions. Cover and cook 30 min. on medium heat. Uncover and increase heat. Cook 10 min. or until brown. Add vinegar,remaining salt and pepper. Stir until vinegar evaporates. Combine potatoes,onions, and blue cheese dressing.( see below for recipe). Chill and serve. ( You can serve hot too!)

Blue Cheese Dressing Recipe
3/4 cup mayo
1 5 oz. container crumbled blue cheese
2 tbsp. sour cream
1 1/2 tsp. prepared horseradish
1/2 tsp. black pepper
Combine all, cover and refrigerate
